A popular wine-oriented bistro, near the Pompidou Center in the Upper Marais is an on-point example. Young sommelier Bastien Fidelin, chef Julien Chevallier, and owner Sarah Michielsen, collaborate to align organic wines with the evolving menu at the bistro dating back to 1936. The team took over last year, preserving its Gallic charm with a copper-clad bar, tile floor, and lace curtains.
