Labo Fermento

A fermentation lab and restaurant, Labo Fermento perfectly marries Oaxacan ingredients with Asian techniques from China, Japan and Korea. Some of the plates include fermented tomatillo, huitlacoche kimchi, and house-made miso made from fermented blue corn.
