Hamdi
In Turkey, kebab is considered an art, with Gaziantep, Şanlıurfa, and Adana as the culinary capitals due to their Arabic influences. Kebab master, Chef Hamdi Arpacı, migrated from Şanlıurfa in the 1960s, starting from a small counter next to Eminönü’s New Mosque, and now manages a kebab dynasty. Although there are two other branches, the flagship Hamdi Restaurant in Eminönü, near the Spice Bazaar and overlooking the Bosphorus, remains the most iconic for its combination of great food and views. Kebab with pistachio or kebab with eggplants are some of local favorites.
